Summer Seasonal Returns - Montanya x Buckel Family Wine - Grappa
Montanya x Buckel Family Wines 2024 Grappa Collaboration
One of our favorite moments of 2024 was the limited-edition release of our Grappa, the result of a collaboration with our Gunnison Valley neighbor, Buckel Family Wine. We're happy to report that this will now be an annual season release!
Check out the recent post from our friends over at Buckel below for more on the what, how, and why on the origins of Grappa:
“So what is Grappa, and where did it originate?
Grappa was originally made in Italy to prevent waste by using the leftovers of wine production and distilling it into a spirit.
In the case of our specific collaboration, Buckel Family Wine produced the base for this spirit with Colorado grapes, using grape pomace from our white and rose wine production. When we make our white and rose wine the first step is to press the grapes to get juice, separating it from the skins and stems of the grape clusters. The resulting solid material is called pomace. The pomace retains a bit of sugar that is fermentable. We rehydrate the pomace with rocky mountain spring water and let it ferment itself into a piquette. The piquette turned out to be less than 8% Alcohol.
It was then barrelled down and transported to Montanya Distillers. They sent it through a 100% copper pot still and collected hearts at about 130-140% alcohol. The final product was proofed down to 47% alcohol or 94 proof with pure mountain spring water and was bottled by hand.”
